It was my first time making macaroni and cheese from scratch. I guess I never bothered previously since Kraft Three Cheese tastes good enough for me and is quick and easy. However, mac and cheese must be a pretty popular side dish for Thanksgiving since all these recipes for it kept popping up while I was browsing around. It piqued my curiosity and I decided to give it a try!

Since I was cooking for only two, I halved the recipe and used a 1.5-quart casserole baking dish. I hadn’t heard of using minced onions in mac and cheese before and was wary of the onion taste being too strong, so I only used half the amount listed. I had white American cheese on hand and used that (so maybe that’s why mine wasn’t as yellow). The only other change was that I sprinkled the mac and cheese with panko crumbs before baking. Right before taking it out of the oven, I broiled it quickly until it was nicely browned. We enjoyed the crunchy and creamy texture (and I think reducing the amount of onions was a good idea). I’ll be experimenting with other made-from-scratch mac and cheese recipes from now on!
